Chicken Biscuit with Molasses Mustard Butter

CHICKEN BISCUIT WITH MOLASSES MUSTARD BUTTER

make around 15 3½” biscuits

For the biscuits:
4 cups bread flour
3¾ cups cake flour
3½ Tbs baking powder
1 Tbs + 1 tsp kosher salt
3 Tbs + 1 tsp sugar
3 sticks + ½ Tbs cold unsalted butter, cubed
3¼ cups buttermilk

For the chicken:
6 chicken breast, cut in half, flattened
1½ cups all-purpose flour
2 tsp kosher salt
2 tsp black pepper
2 eggs, whisked
Canola oil for frying

For the butter:
¾ cup Jay D’s Louisiana Molasses Mustard
2 sticks unsalted butter

For the biscuits:
Preheat oven to 375°F. Keep all ingredients as cold as possible!

In a medium mixing bowl, combine both bread and cake flour, baking powder, salt and sugar from the biscuit ingredients. Using a pastry blender or your hands, cut cold butter into flour mixture until butter is the size of peas. Add buttermilk and mix with your hands until shaggy. Cover and rest for 20 minutes. Roll out dough on a floured surface and fold once (to create layers). Roll out again to 1-1¼” thick and cut into 3½” circles. When cutting biscuits out, DO NOT TWIST CUTTER. Just simply press down and lift cutter back up. Place biscuits about ½” apart on greased baking sheet and bake until golden brown.

For the chicken:
Heat canola oil to 350°F in a skillet or table-top fryer. Dredge chicken in seasoned flour, place in egg-wash, then dredge back through flour. Fry chicken until golden, brown, and delicious (about 4-5 minutes).

For the butter:
Soften butter and mix in Jay D’s Louisiana Molasses Mustard.

Open biscuit up and slather butter on both halves. Place fried chicken breast on biscuit and put the other half of biscuit on top of chicken and enjoy your chicken biscuit sandwich!

SPICY AND SWEET BBQ RUB BAKED CHICKEN WINGS

Serves 2

1 lb chicken wings

1 Tbsp. vegetable oil

1 Tbsp Jay D’s Spicy & Sweet BBQ Rub

Preheat oven to 400F. Mix vegetable oil with Jay D’s BBQ rub, toss in chicken wings and let stand for 5 minutes. Spread wings out on a single sheet pan in an even layer. Bake for 45-50 minutes until crispy or until internal temperature reaches 165F.

SPICY AND SWEET BBQ RUB BUTTER FRIED WINGS

Serves 2

½ cup softened, unsalted butter

½ tbsp Jay D’s Spicy & Sweet BBQ Rub

1 lb chicken wings

salt and pepper to taste

Melt butter in saucepan and add ½ tbsp of jay d’s spicy & sweet BBQ rub. Set aside. Heat oil to 350f in a deep fryer or large dutch oven. Add wings and cook for 8-10 minutes or until golden brown. Once cooked, toss in Jay D’s Spicy & Sweet BBQ butter.

JAY D'S BARBECUE CHICKEN QUESADILLAS

JAY D'S BARBECUE CHICKEN QUESADILLAS

Makes 4 Servings

8 ounces cooked chicken, shredded

4 (12 in) flour tortillas

12 ounces shredded Monterey jack cheese

4 ounces Jay D’s Louisiana Barbecue Sauce

1 red onion, thinly sliced, divided into 4 portions

Layer half of each tortilla with 2 ounces of chicken, 1 portion of red onion, 4 ounces of Monterey jack cheese, and 1 oz. of Jay D’s Louisiana Barbecue sauce. Fold tortilla in half. Heat a large sauté pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Slice into 4 pieces and garnish with sliced green onions. Serve with Jay D’s BBQ Aioli.

Makes 2 servings

1 store bought pizza crust

5 oz. Jay D’s Louisiana Barbecue Sauce

1 ½ cup cooked chicken, shredded

1 ½ cups Monterey Jack Cheese

1 red onion, thinly sliced

1/4 cup sliced green onion for garnish

Preheat oven to 450 degrees F. Roll out the pizza dough and place on a pizza pan or large baking sheet. Spread the barbecue sauce all over crust. Toss chicken with 2 oz. barbecue sauce. Top with chicken, cheese, and red onion. Bake 8 to 10 minutes, or until the cheese melts and the crust is golden. Garnish with sliced green onions.
